Power Foods | Macaroni and Cheese

Powerlifter Food

One of my favourite bulking foods. It has a complete supply of protein, carbs, fats and easy to eat a lot of in one sitting.
This recipe is enough to make the amount in the picture above. 1-2 servings.

Ingredients

  • 1 cup of macaroni or pasta shells
  • 1/4 butter
  • 1/4 cup flour
  • 2 cups of milk (or half and half)
  • 3-4 cups of cheddar cheese (shredded)
  • Salt and pepper to taste
  • Panko Bread Crumbs (optional)

Directions

1. Cook macaroni according to package instructions.

2. In a medium sized saucepan, melt butter over medium heat. Stir in flour, about a 1/2 teaspoon of salt and pepper. Slowly add in the milk while stirring.

3. Cook and stir until bubbling.

4. Stir in 3 1/4 cups of cheese until melted. At this point taste the sauce and add more salt to taste.

5. Drain macaroni. Add to cheese sauce and stir to coat.

6. Put the mixture into an oven safe dish. Spread the leftover shredded cheese over the top and sprinkle with the panko bread crumbs.

7. Place it in the oven on the middle rack and broil it on high for a few minutes until you see the cheese melted and browned a bit.

That looks good. I would use some amount of cream with the milk. Half and half is good idea but I've used milk with just a touch of whole cream. It really does help make the texture extra smooth

I thought about adding whole cream as an alternative or extra, but didn't want to recommend it in the recipe without trying it first. Good to hear it works well! Gonna try it out next time.
