Homemade Chicken Fingers with Spicy Lime Mayo

Something else you can do with those boring chicken breasts. Panko crumbs give these chicken fingers a crunchy crust with a spicy lime mayo to dip.


Chicken Fingers
  • 2 cups panko crumbs
  • 2 chicken breasts (boneless/skinless), sliced into 3-4 fingers
  • Salt and pepper to taste
  • 1/2 cup of flour
  • 1 egg beaten
  • Vegetable oil for pan frying

Spicy Lime Mayo Sauce
  • 1/4 cup of mayonnaise
  • Sriracha Sauce to taste
  • 1/2 a lime, squeezed


Chicken Fingers
  1. Season chicken with salt and pepper.
  2. Cover chicken with flour and shake off excess, then dip in beaten egg and then in the panko.
  3. Add vegetable oil into a frying pan so that the chicken would be just a little under half way submerged. When the oil is hot, add chicken fingers making sure to not crowd the pan. You can cook them in batches. Fry the chicken until the juices run clear and the crust is golden brown about 5-6 minutes per side. Serve with Spicy Lime Mayo sauce.
Tip: If the crust browns really fast, your oil is too hot. Reduce the heat.

Spicy Lime Mayo Sauce
  1. In a dipping bowl combine the mayo and sriracha sauce until you get an even orange-red colour.
  2. Squeeze the lime into the bowl and then mix until it's incorporated.
  3. Dip away!
